In Colocation Interconnectivity(CIC) instruction, it says “2 physical cables are available per link for redundancy purpose”, but, could we only plug 1 cable into our side of switches?

Please check the filters along the path whether Ping packets are not filtered on vFirewall, etc.
Also, please check the static route setup on vFirewall whether a route for the return traffic to the source IP address is configured.

No, you can't modify server segment NW address and subnet mask after deployment. You need to delete the segment and recreate it.

Yes, you can connect it to 2 ports of the same L2 switch.
But please avoid to make loop topology and configured as Act/Stb switch.
